![]() Saturday, October 25, 2008 Nummies It's not a King of the Slacker's "Feck It in the Oven Episode" even though it does involve an oven. But it's delicious, and my new cracked-out winter plate of deliciousness. Roasted Winter Veggies You'll need: 2 sweet potatoes 1 large baking potato 1 large red onion 1 bulb of garlic 1 acorn squash Olive oil Kosher salt Pepper Honey (preferably local) Butter You could preheat your oven to 350 degrees, but I always forget to preheat the oven, and will turn it on at the "oh, yeah, I have a pan full of stuff that needs to go into the oven" stage. To begin, cut your acorn squash in half and scoop out the seeds. Place cut side down in one 1/2 of a 13x9x2 baking dish. Peel the sweet potatoes and cut into cubes (about bite-size). Cut potato into similar size pieces. Peel and chop onion into similar size pieces--the onion layers may fall apart, but that's cool. Throw into the pan with your acorn squash, but on the other 1/2 of the pan. Break apart your garlic bulb, and peel your garlic cloves. Sprinkle these over everything in the pan. Give everything a good drizzle in olive oil (not a stingy drizzle, but don't drown your cubed veg in oil), sprinkle with salt and pepper. Throw it in your oven for about an hour and a half or until your veggies are soft and caramelized. Pull the acorn squash out of the pan and scoop out the squash from the peel--I cut mine into cube shapes in the skin, then scoop it out with a spoon (like cutting a mango or an avocado). Add the cubed squash back to the pan and toss with the other veg.* To serve, fill your plate with veggies, cover with butter to your liking and drizzle some honey over everything. Devour, remembering that these are veggies and good for you. And if you're King of the Slackers, potato peels contain potassium, which prevents the dreaded "banana scurvy" so this recipe is super-duper good for you specifically. :) *I find the garlic flavor that comes out in roasting to be plenty garlicky for me.
