![]() Monday, March 16, 2009 Nom Nom Nom I made an incredibly awesome nummy yesterday. Thai Chicken Soup 6 cloves garlic, peeled 2 shallots, peeled 8 whole peppercorns 1 heaping teaspoon red curry paste, heaped according to your curry obsession 1 can (14 ounces-ish) coconut milk 1/3-1/2 cup half and half or light cream 2-3 cups chicken stock 1 2 1/2" to 3" chunk of ginger, peeled and sliced very thin 2 long stems of lemongrass 2 limes, zested (reserve zest) and juiced (reserve juice) 1 small, but potent, red chili 1/2-3/4 lb. chicken 1 T fish sauce 1 t brown sugar 3 T fresh cilantro Puree garlic, shallots, peppercorns and curry paste together. Once pureed, throw it into a saucepan over medium heat and let it warm and loosen up a bit. Add coconut milk, cream and chicken stock; bring to a boil. When boiling, add your ginger, chili, lemongrass (or decimated limes if you forgot to pick up lemongrass at the store) and chicken, raw or cooked but very thinly sliced. If your chicken is raw, you'll want to simmer this stuff until your chicken is cooked through--about 10 minutes. Otherwise, just simmer everything until the chicken is warmed through and your broth starts to taste lemongrassy. (If you don't have enough liquid to cover the chicken, add more stock.) Remove the lemongrass (or limes), add the zest, juice and remaining ingredients. Devour immediately. In other news, I'm still working on my resolution to get healthy--I survived both colonoscopy and endoscopy. They found a bit of acid damage in my esophagus and I'm on a 3 month course of Nexium for that. They also found a form of colitis caused by excess collagen production in my large intestine--the intestine doesn't absorb water properly, causing diaherrha. Woo! So, short of sucking out my large intestine collagen and injecting it into wrinkly people, I have to be on a super-high fiber diet--30 to 35 grams daily--plus an over the counter fiber supplement and a prescription anti-diaherrhea/fiber supplement. Exciting. I also went to the gynocologist--first time in 11 years. They're trying to kick-start my period by giving me progesterone and did a ton of bloodwork to try to pinpoint why I haven't had a normal period (I have one every 4 to 6 months). Ultimately, I'm looking for a medical reason to have the bits yanked out, and after 13 years of screwed-upedness down there, I'm hoping that I can get everything pulled out. We'll see what happens with that, but I'm hopeful that it's a mess down there. In final news of health, I joined the gym. Gotta get my lard ass in shape. I've been snowshoeing like a fiend this winter, but I should be doing more than that.
